    Cooking With Bob

I began my cooking career at the age of 16.  At which
time I purchased my first catering business, at the 17
I attended Upsala College where I got a degree in Business
but age of 21 I found myself attending Johnson and
Wales University in there Culinary arts program studying
how to do the things I had been doing for years. 

Simple Quick Recipes

New England Clam Chowder

 
1 Cup Chopped Onions
1 Cup Chopped Celery
3 or 4 Cubed Potatoes
Large Can or 2 Small Clam Juice
1 ½ Cup Fat Free Half/Half
Can of Butter Flavor Pam
1/3 to ¼ Cup Flour
Butter Salt
 

Onions and Celery coat with Pam and Seat in pot with a little of juice(3-5 minutes to translucent)
Add Clam juice and potatoes bring to boil.
Spray Pam in bowl (A lot) and add flour and make a Rue.
When Potatoes soft add Half & Half to Pot and bring to almost boil.
Add some soup to Rue and then add Rue back to pot.
 
Can add Butter Salt to test.

Quick Stroganoff

1/2 teaspoon salt
1/4 teaspoon pepper
20 oz (1Package)  of lean chop meat.
1/4 cup shortening
1 large onion thinly sliced
1/4 cup of beef stock or consommé
1 teaspoon of prepared mustard
3/4 cup of sour cream
1 package of egg noodles
1-3 tablespoons cornstarch (if needed)


Boil a pot of water and cook over medium heat the egg noodles until they are tender but not mushy. Drain but do not rinse

In a separate skillet brown in a skillet the chop meat, once done drain off any additional fat that may have come from the meat.  Add shortening, onion, salt pepper, and mustard.  Simmer for 10 minutes over low heat or until hot. Stir in Sour cream and cover on stove.  Sauce will thicken If the sauce is not thick enough add a small amount of cornstarch with cold water until lumps are out.  Slowly stir in cornstarch until desired thickness is achieved.
